These are so easy and so yummy!

BUTTERSCOTCH BUTTONS

These biscuits are so yummy and so easy, they taste like caramel

and don't last very long in our house. I have a heap of extra people

to feed this week as we are having a horse breaking school, so I thought

I better fill the biscuit barrel. These are actually supposed to be the

size of a 50 cent piece when cooked, but as they are for men I make them

a lot bigger. I also double the recipe. The original recipe was taken

from Woman's Weekly.


All you do is beat 4 1/2 tablespoons butter, 1 teaspoon vanilla essence,


1/2 cup brown sugar, firmly packed and 1 tablespoon of golden syrup.


Beat this until it is light and fluffy, then stir in sifted flour (I don't sift), 1 1/4 cups SR Flour.


Roll 2 level teaspoons of mixture into a ball and place 5cm apart on


greased oven trays, flatten slightly with a fork.



Repeat with remaining mixture. Bake in a slow oven for about 30 mins


or until firm.


This recipe if kept to size makes about 40 little buttons! YUM!

This recipe doubles, triples, etc. very well and they freeze great.
